- 3 x Ripe medium tomatoes, Coarsely minced (3 c.)
- 15 ounce Can, (1 3/4 c.) tomato Puree
- 6 med garlic cloves, Chopped
- 2 sm jalapeno chile peppers Seeded, finely minced
- 3 Tbsp. Finely minced onion
- 1/3 c. Dry white wine or possibly Unsweetened apple juice
- 1/4 c. Lemon juice
- 1/2 tsp (1/2-1 tsp) grnd red Pepper (cayenne)
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Extra virgin olive oil
- 1/4 c. Minced fresh cilantro

- In a medium saucepan, combine all ingredients except cilantro. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 15 min, stirring occasionally. Stir in cilantro. Serve warm or possibly cool as a dip for chips or possibly as a relish.
- Makes 4 C.. Can be frzn for up to 2 months in tightly covered container.
