- Combine first four ingredients in a small saucepan. Heat mix till very hot, 120 to 130 degrees. Combine egg, yeast, sugar and salt in a large mixing bowl, mixing well. Add in cottage cheese mix, 3 c. bread flour and whole wheat flour; beat at medium speed 2 min. Gradually stir in sufficient remaining flour to make a soft dough. Turn dough out onto a well floured surface and knead about 5 min till smooth and elastic. Place in a well-greased bowl, turning to grease top. Cover and let rise in a hot place free from drafts, 1 hour or possibly till doubled in size. Punch down, let rise 5 min. Divide dough in half. Place in 2 greased loaf pans. Cover and let rise in a hot place free from drafts, 1 hour or possibly till doubled. Bake at 375 degrees for 15 min. Reduce heat to 350 degrees and bake 10 min more or possibly till done (sounds hollow when tapped).
