Honey Walnut Shrimp- Crispy battered shrimp drenched in a sweet creamy glaze and topped with candied walnuts. All the flavor from your favorite restaurant, for a lot less money!My second son Spencer is a huge fan of shrimp. He has been requesting it for his birthday dinner for the past few years. Remember the Shrimp Tacos? I actually made this Honey Walnut Shrimp this winter, but the lighting was terrible, so I didn’t get a chance to take blog worthy photos. Which is really a shame, because this stuff is phenomenal!! I made it again for his birthday, and this time I knew I’d have plenty of daylight. Gotta love summer birthdays! If you’ve ever had honey glazed shrimp at a restaurant, you know that it can be a little spendy. I’ve always been willing to fork out the cash because we love it so much. But now it is great to have the option of making it at home. I can feed 4-5 of us for the cost of one serving at a Chinese restaurant. And to tell the truth, I actually liked this homemade version even better!
Honey Walnut Shrimp
- 1 pound uncooked shrimp
- 1/2 cup cornstarch
- 1/4 tsp salt
- 1/2 cup egg whites (about 3-4 large eggs), beaten
- 2-3 cups canola oil
- Sauce:
- 1 1/2 Tbsp honey
- 3 Tbsp sweetened condensed milk
- 1 Tbsp lemon juice
- 1/4 cup mayonnaise
- 1/4 tsp salt
- Sugared Walnuts:
- 1/2 cup walnuts
- 1/2 cup water
- 1/2 cup sugar
- 1/4 tsp salt
For walnuts: Bring water and sugar to a boil in a small saucepan. Cook and stir over medium high heat till mixture starts to turn golden brown. Quickly add walnuts and salt, stirring till the nuts are coated. Pour out onto a plate, spreading apart the walnuts. Let cool while you prepare shrimp.
For sauce: Combine all ingredients in a small bowl and whisk till smooth. Set aside.
For shrimp: Peel and devein if necessary. Heat oil to about 375°. Combine cornstarch, salt, and egg whites till smooth. Dip shrimp in cornstarch mixture and coat evenly. Fry a few pieces at a time in the hot oil. Mine took about 4 minutes to lightly brown and cook completely. Remove to paper towels. When all the shrimp is cooked, place in a serving dish. Add the walnuts and the sauce and stir to coat. Serve over hot rice.
