- Combine dough ingredients in a bowl until thoroughly mixed.
- Lightly flour a work surface.
- Knead the dough 2-3 minutes.
- Only add flour if the dough is too tacky/wet.
- The dough should feel silky and smooth.
- Cover the dough and let it sit one hour.
- Knead again a few times, then divide the dough into 1 1/2 inch balls.
- Cover and let rest 10 minutes.
- Using a rolling pin, roll each ball into 1/8-1/4 inch circles. If the circles are not exact, no problem.
- Pour oil in the skillet and heat it to 375 degrees, or put the heat on high, wait a couple of minutes, then take a piece of your dough and drop it in. The oil is ready when the dough sizzles.
- Gently place 2-3 pieces of dough in the oil and begin to ladle or baste hot oil over the tops. This step is crucial to success.
- Cook 1 minute, flip to the other side, baste.
- The sopaipillas will puff up and form empty pockets in the middle.
- When golden brown each side, place on paper towels.
- Sprinkle on cinnamon sugar and serve with honey butter.
