11/20 c. flour 11/20 c. oat bran 1 c. minced pecans 1/2 tsp salt 3 tsp baking pwdr

11/20 tsp apple pie spice 1 c. honey 2 x egg whites 4 Tbsp. safflower oil 16 ounce can apricot halves in extra-light syrup minced finely with syrup reserved

1. Preheat oven to 325F, prepare pans. Combine first 6 ingredients (salt is optional). In another bowl combine honey, oil, egg whites, apricots & syrup; add in dry mix to wet mix till just combined. Spoon into pans and top with extra pecan halves if you like, bake 25-30 mins or possibly till cooked.
2. Makes 18muffins.
