While waisting away the hours on Pinterest, I came across a picture of the most delicious looking toast...I clicked on the picture, got to the original post and discovered the secret to making one of the best tasting breakfasts I have had in a long time and it makes and one heckova appetizer...two in one, got to love that!
Avocado, goat cheese, mint and lime juice...mixed together, seasoned with salt and freshly ground black pepper and spread onto toast - I mean, piled onto toast - it's truly a game-changer! You cannot eat this and not feel good - because it just tastes so good...the frest mint is a nice little surprise which will awaken your brain in seconds! About the name, Homesick Toast...an Aussie living in New York makes this when she is homesick for her native country - where apparently it is a staple for breakfast. So if you're homesick for whatever, make this and cure thyself.
Over the last two weeks I've made this almost every morning for breakfast...it's filling, bright, delicious and I can't see myself getting sick of it any time soon. Because of the unique flavors, I decided to serve this as an appetizer...small pieces of toast piled high - they flew off the plate! I don't know what else to tell you except this is worthy of five dangs on the ol' Meter because it's dang, dang, dang, dang, dang good!
Homesick Toast - Adapted From Simple Provisions (simpleprovisions.com.au)
2 slices of good bread, whole wheat or whole grain is best
1 ripe avocado (to tell if an avocado is ripe, remove the "button" on the end, if it is green underneath then you'll have a perfect avocado, if it is brown, then it's past-due and will be brown inside.)
- juice of 1/2 of a lime
- 2 teaspoons chopped mint, plus extra for garnish if using as an appetizer
- 1/2 cup goat cheese
- salt and freshly ground pepper to taste
Toast your bread, no need to butter it unless you're a glutton. While the bread is toasting, cut the avocado in half, remove the pit and scoop out the flesh into a bowl. Mash the avocado with a fork and add the lime juice and mint, mix together. Crumble the cheese and fold it into the avocado mixture, leaving some of the cheese in chunks.
Spread/pile the avocado mixture onto toast and season to taste with salt and pepper.
If you're making these for appetizers, cut toast into quarters or use a small baguette that is sliced and toasted. Put a sprig of mint on top of each piece before serving.
