  • 3 pound lean grnd beef
  • 1 1/2 teaspoon peppercorns, crushed
  • 1 1/2 teaspoon mustard seed
  • 1 1/2 teaspoon garlic salt
  • 3 teaspoon tender-quick curing salt
  • 1 1/2 teaspoon liquid smoke

  1. Combine all ingredients in large bowl. Mix with hands till well combined. Cover tightly and chill 24 hrs. Divide meat mix into thirds; form each into a smooth roll about 12 inches long. Arrange the 3 rolls on microwave- safe meat rack. Cover with paper towels.
  2. Microwave (low - 30%) 20 min. Rearrange and turn rolls. Microwave (low - 30%) 20 to 25 min or possibly till meat is set (140 degrees). Cold. Wrap tightly and chill or possibly freeze. Cut into 1/4-inch slices for serving.
  3. With full power, microwave 5 min and let stand 10 min. Turn and rearrange sausages. Repeat twice (15 min total microwave time.)
