Heat oil in a medium saucepan over medium heat. Add onion and sauté, stirring occasionally, for 3 minutes until the onions are softened and translucent. Add garlic and chives and sauté for 2 more minutes, until softened and fragrant. Add wine, water, Worcestershire sauce, espresso powder, tomato paste, ketchup, mustard, liquid smoke, salt, and pepper. Reduce heat to low, cover, and simmer for 15 minutes stirring occasionally. Remove from heat and use an immersion blender to puree until smooth. If you don't have an immersion blender you can carefully transfer the mixture to an upright blender, cover, and blend until smooth. Transfer to a clean mason jar and allow to rest until cooled to room temperature. Seal with a lid and store in the refrigerator. Are you a topper?
I know I am. I love topping my steak with sauce or even some bad ass blue cheese compound butter.
Today, I settled for some homemade steak sauce.
Hey you all, please admit that homemade outweighs in flavor and cost any day. Right. You know I’m right.
This one took some time to get just the right tang. The boys were out and about and I wanted to make something that was quick, like steak, but wanted to add a nice dipping sauce or a topper for our steaks.
It simply amazes me that they show up just in time for dinner. Every time too.
I love it because leftovers or cold dinners are meant to be consumed the next day.
But of course, there were no leftovers tonight.
Thanks for stopping by and have a great day.
