I'm bringing this quick and easy recipe for Homemade Refrigerator Pickle Relish to the Sunday Supper table because hot dogs are one of my husband's very favorite things to eat, and since they are viewed as a "enjoy once in a while food" in this house, he doesn't eat them as often as he would like.
While he enjoys relish on his dogs, he is not a fan of sweet pickle relish, so I developed this recipe just for him! This relish is not sweet at all. The brine uses a small amount of sugar which doesn't really lend much sweetness to the end product. This suites my husband is just fine! Of course, if you prefer a sweeter relish, simply increase the amount of sugar in the recipe to your liking.
I don't process this relish in canning jars. It doesn't last that long in my house to bother. I just store it in the refrigerator in a canning jar or a plastic container with a tight fitting lid. I imagine it would be fine for a week or so in the fridge, but we always finish it before then.
If you've never pickled anything before, I'm here to tell you, it's one of the easiest things to do in the kitchen! You can also add whatever herbs or spices you like to the brine to change up flavors. When you pickle something quickly, like this recipe, the veggies tend to keep a nice crunch, which I really love!
We like this relish with big and chunky pieces, because it makes a great pickled "salad" to eat along side with our meals, but if you prefer more traditional sized relish, just pulse the veggies in a food processor a few times before adding to the brine liquid.
Through the years, my husband Joe has been an awesome father to our three kids. He's always provided for us and made sure the kids were able to take advantage of every opportunity they wanted to explore growing up. He's worked hard so I could be a stay-at-home mom and be able to raise our kids hands-on the way we always wanted to. My kids are lucky to have him. Unfortunately, my experience growing up was quite different, so to see my kids interact with a father who loves them more than he loves himself is priceless.
So today, I honor one of the best fathers I know, my hubby, with his favorite meal...hog dogs with Homemade Refrigerator Pickle Relish!
Homemade Refrigerator Pickle Relish

Quick recipe for a chunky. not-to-sweet relish with cucumber and onion perfect for hot dogs, burgers and more!
Ingredients
2 - 3 English cucumbers, cubed into 1/2" pieces
1/2 cup coarsely chopped red onion
3/4 cup white vinegar
3/4 cup water
3 TBS granulated sugar 1 TBS kosher salt
1 clove garlic, minced
pinch red pepper flakes (or more to taste)
Instructions
In medium saucepan, add vinegar, water, sugar, salt, garlic and red pepper flakes. Bring to boil. Pack cucumber and onion pieces into a quart sized jar or plastic container. Pour hot vinegar mixture over veggies and let sit on counter, with lid off, for at least 30 minutes. Cover and refrigerate overnight. (Drain off excess liquid as needed)
Yield: Approx. 1 quart
