homemade macaroni & cheese
Ingredients
- 7 oz. elbow macaroni
- ¼ c butter
- 3 tbsp all purpose flour
- 2 c milk
- 8 oz. cream cheese, softened
- ½ tsp. salt
- ½ tsp. pepper
- 2 tsp. dijon mustard
- 2 c cheddar cheese, cubed
- 1 c breadcrumbs
- 2 tbsp butter, melted
- 2 tbsp parsley, chopped
Putting it all together
Pre-heat the oven to 400F. Cook macaroni al dente, drain and set aside. In a saucepan, melt ¼ c butter, stir in flour. Cook over medium heat, stirring until smooth & bubbly. Stir in milk, cream cheese, salt, pepper and mustard. Continue stirring until sauce thickens, about 3-4 minutes. Stir in macaroni and cheddar cheese. Pour into a casserole dish, set aside.
In a separate bowl, stir together breadcrumbs, melted butter and parsley. Sprinkle over macaroni and cheese. Bake 15-20 minutes until golden brown and heated through. Serves 6
Optional
To get the top crispy, put under the broiler. Watch closely!
