Mild and delicately flavoured almonds, makes a healthy and taste enhancing addition to both sweet and savoury dishes. They impart a earthy and nutty (Silly me. Of course, its a nut!) flavour to the dishes. I am a great fan of nuts and I try to find excuses to use them often in my cooking, peanuts and almonds topping the list. This badam kesar mix is very simple and comes handy most of the time. Whenever you want to satiate your sweet tooth, this will be your go-to thing if you have this mix in your pantry. All you have to do is mix this with milk and enjoy it chilled or warm.

Almond Saffron Mix - To enhance the flavour.

Instructions

Blanch the almonds and remove the skin. Allow them to dry and then toast them until they turn golden brown.

Grind them almost fine along with the other ingredients and store in an air tight container.

Notes

This can be used to flavour milk, custard, payasam and ice cream.

Instead of cardamom powder, you can crush cardamom pods and along with the skin mix them with the ground almond-saffron powder. When you use the Mix in other recipes, take out the skin before you add it. Also you can adjust the cardamom flavour as you want it.

One thing to keep in mind while grinding is do not grind it for more than 30 sec at a time. Try to use pulse option. If you keep on grinding, almonds will release their oil and it will become a paste instead of powder.
