Homemade Honey Crackers

I was born in late December. As a little girl, my mom wanted me to start kindergarten when I was 4 years old. But, I am sure you all know you must be 5 to start Kindergarten. Back in the olden days, the elementary school near my home, Hillcrest, had sessions that started in January. So my mom figured I was now 5 and enrolled me in their Kindergarten class. I have fond memories of those few short months that I was there. One memory that had been etched in my brain, loving so much, was Graham Crackers and milk for snack time. I loved my teacher Mrs. MacIntyre, along with memories for May-day, where we danced around the May Pole.

Sometimes it’s those memories that bring the creative juices flowing and makes me want to recreate again.

That’s why I had to make Homemade Honey Crackers.

My recipe is loosely adapted from Oh Shine On.

Homemade Honey Crackers

Ingredients

Directions

Combine all the dry ingredients in the bowl of a food processor.

Cut in the butter until the texture is dry and crumbly.

In a small bowl, mix the honey, water, yogurt and vanilla and mix with the dry ingredients until blended in the food processor.

Pulse the dough until it forms a ball.

Wrap in plastic wrap and chill for at least one hour.

Preheat the oven to 350 degrees.

Roll the dough out very thin onto a floured surface or on top of parchment paper and cut into 1 inch squares.

Form whatever excess dough you have left over and re-knead the dough and flatten until all has been used up.

Poke each cracker with a fork to give it the traditional graham cracker shape. Place them on an cookie sheet and bake for 15-17 minutes or until they are golden brown and crisp.

Store in an air tight container.

They will keep for awhile.

To this day I still love graham crackers and milk.

I almost wish I had the little carton’s the milk came in to make it feel like I was that fiver year old little girl in Mrs. MacIntyre’s kindergarten class at Hillcrest Elementary School in San Francisco.

I can remember the name of every single teacher I had from K-8. Weird , but true. Can you?
