- ¾ cup buttermilk (Red Star's website calls for regular milk so that's fine too but I had some buttermilk I wanted to use up)
- 1 egg
- 2 TBSP oil
- 3½ cup bread flour
- 1 tsp salt
- 1 Tbsp sugar
- 2¼ tsp RED STAR Active Dry Yeast
- For the Glaze:
- 1 egg
- 1 Tbsp water
- 2 tsp sesame seeds (optional)

%20and%20while%20fine%20to%20eat%20a%20burger%20with%20they%20just%20were%20not%20cutting%20it%20for%20photographing%20one.%3C/p%3E%3Cp%3ELet%E2%80%99s%20make%20some%20I%20said!!%20So%20I%20did%20a%20search%20and%20found%20some%20that%20I%20thought%20looked%20nice%20and%20away%20I%20went.%20Eight%20bazillion%20hours%20later%20(OK,%20really%20only%20about%204),%20after%20all%20the%20proofing%20and%20rising%20and%20hitting%20and%20proofing%20again,%20I%20was%20able%20to%20bake%20them.%20They%20were%20GORGEOUS.%20And%20heavy.%20More%20biscuit%20quality%20than%20burger%20bun%20quality.%20I%20tried%20to%20convince%20myself%20but%20I%E2%80%99ve%20learned%20one%20thing%E2%80%A6if%20I%20have%20to%20try%20and%20convince%20myself%20there%20is%20simply%20no%20getting%20beyond%20the%20fact%20that%20I%20didn%E2%80%99t%20love%20them.%20I%20had%20a%20concern%20as%20I%20was%20making%20them%20that%20seems%20to%20have%20been%20reasonable%E2%80%A6why%20wasn%E2%80%99t%20the%20liquid%20warmed%20to%20insure%20the%20yeast%20reacted?%20Hmm???%20WHY???%3C/p%3E%3Cp%3ESo%20next%20time%20I%20smartened%20up.%20I%20had%20a%20packet%20of%20Red%20Star%20Yeast%20so%20I%20went%20to%20their%20website%20for%20a%20recipe%20and%20lo%20and%20behold%20they%20had%20one%20for%20Hamburger%20Buns.%20Funny%20how%20that%20works%20huh?%20Except%20for%20a%20final%20egg%20wash%20and%20some%20sesame%20seeds%20they%20were%20perfect.%20Well,%20almost.%20I%20did%20take%20issue%20with%20their%20directions;%20I%20thought%20their%20times%20for%20proofing%20should%20have%20included%20some%20time%20estimates%E2%80%A6I%20took%20a%20qualified%20guess%20and%20was%20close%20but%20a%20newbie%20would%20have%20been%20in%20trouble.%20I%20left%20them%20a%20comment%20suggesting%20the%20inclusion%20of%20a%20range%20and%20guess%20what?%20They%20wrote%20me%20today%20and%20agreed%20and%20have%20since%20changed%20the%20recipe%20to%20include%20a%20time%20range%20for%20proofing%20(the%20time%20it%20takes%20to%20rise).%20LOVE%20that%20about%20a%20company%20that%20actually%20listens,%20don%E2%80%99t%20you?%3C/p%3E%3Cp%3EThese%20were%20easy%20as%20long%20as%20you%E2%80%99ll%20be%20around%20the%20house%20for%20a%20couple%20of%20hours.%20Bread%20baking%20is%20not%20hard%20but%20it%20does%20require%20some%20time%20and%20I%20make%20sure%20I%20can%20dedicate%20an%20afternoon%20to%20being%20home;%20other%20than%20that?%20There%20is%20only%20about%2015%20minutes%20of%20work.%20The%20homemade%20hamburger%20buns%20are%20so%20good%20I%20could%20toast%20them%20and%20just%20add%20butter%20and%20jam%20for%20breakfast;%20who%20cares%20if%20beef%20was%20intended?%3C/p%3E%3Cp%3ELook%20for%20my%20Smashburger%20Spicy%20Cowboy%20burger%20this%20coming%20Monday%20too;%20it%20is%20a%20real%20winner!%3C/p%3E%3Cp%3EHomemade%20Hamburger%20Buns%3C/p%3E%3Cp%3E20%20minPrep%20Time%3C/p%3E%3Cp%3E12%20minCook%20Time%3C/p%3E%3Cp%3E32%20minTotal%20Time%3C/p%3E%3Cp%3ESave%20Recipe%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Dough:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ECombine%20yeast,%201%20cup%20of%20the%20flour,%20salt%20and%20sugar.%20In%20a%20microwave-safe%20bowl/cup,%20heat%20water%20and%20milk%20to%20120%C2%B0%20to%20130%C2%B0F.%3C/p%3E%3Cp%3ECombine%20the%20dry%20mixture%20with%20the%20milk,%20water%20and%20oil%20in%20a%20mixing%20bowl%20with%20paddle%20or%20beaters%20and%20beat%20for%204%20minutes%20on%20medium%20speed.%20Add%20egg;%20beat%201%20minute.%3C/p%3E%3Cp%3EGradually%20add%20the%20remaining%20flour%20and%20knead%20with%20dough%20hook(s)%205%20to%207%20minutes%20until%20smooth%20and%20elastic.%20Place%20dough%20in%20lightly%20oiled%20bowl%20and%20turn%20to%20grease%20top.%20Cover;%20let%20rise%20until%20dough%20has%20doubled.%20Check%20at%2060%20minutes%20and%20continue%20checking%20every%2030%20minutes%20until%20doubled.%20For%20me%20it%20took%20almost%202%20hours%20but%20I'm%20at%20altitude%20so%20nothing%20is%20the%20same!%3C/p%3E%3Cp%3ETurn%20dough%20onto%20lightly%20floured%20surface;%20punch%20down%20to%20remove%20air%20bubbles.%20Divide%20into%208%20equal%20pieces.%20Shape%20each%20piece%20into%20a%20smooth%20ball.%20Place%20on%202%20large%20greased%20baking%20pans%20or%20use%20parchment%20paper.%20Flatten%20each%20ball%20to%20a%204-inch%20diameter,%20allowing%20one%20inch%20between%20buns.%20Cover;%20let%20rise%20until%20indentation%20remains%20after%20touching,%20about%2020-30%20minutes.%3C/p%3E%3Cp%3EFor%20glaze,%20whisk%20together%20egg%20and%20water%20and%20brush%20on%20rolls.%20Sprinkle%20with%20sesame%20seeds%20(optional).%3C/p%3E%3Cp%3EBake%20in%20preheated%20400%C2%B0F%20oven%20for%2010%20to%2012%20minutes.%20Remove%20from%20baking%20pan%20and%20let%20cool%20completely%20on%20wire%20rack%20before%20slicingNotes%3C/p%3E%3Cp%3EPrep%20time%20does%20not%20include%20the%20time%20for%20the%20bread%20to%20rise;%20plan%20on%20up%20to%202%20hours%20for%20that%20portion%20of%20the%20recipe.%3C/p%3E%3Cp%3EFor%20variations%20on%20how%20to%20make%20by%20hand%20and%20in%20a%20bread%20m
