%3C/p%3E%3Cp%3ESince%20I%20am%20using%20Morning%20Moo,%20I'm%20adding%20water.%20If%20you%20were%20not%20using%20milk%20powder,%20you%20would%20add%20milk.%20Morning%20Moo%20likes%20hot%20water...corn%20starch%20likes%20cold%20water.%20I%20use%20cold%20water%20and%20the%20whisk.%20The%20trick%20is%20to%20add%20just%20a%20little%20of%20the%20water%20-%20say,%201/3%20cup%20(this%20goes%20for%20milk%20too)%20and%20stir%20to%20combine.%20This%20gets%20out%20any%20little%20lumps%20and%20makes%20it%20much%20easier%20to%20get%20everything%20to%20blend.%3C/p%3E%3Cp%3EOnce%20you've%20blended%20in%20that%20first%20bit%20of%20liquid,%20you%20can%20add%20the%20rest%20-%20a%20total%20of%202%20cups.%20The%20Morning%20Moo%20is%20a%20bit%20foamy%20at%20this%20point,%20but%20worry%20not!%20It%20will%20settle%20right%20in%20as%20the%20pudding%20begins%20to%20warm%20up.%3C/p%3E%3Cp%3EUse%20a%20medium%20heat%20and%20bring%20it%20to%20a%20simmer.%20See?%20It's%20already%20coming%20together%20some.%3C/p%3E%3Cp%3EYou%20want%20to%20keep%20stirring,%20and%20let%20it%20thicken,%20then%20let%20it%20simmer/bubble%20for%20a%20minute%20or%20so.%20If%20you%20don't%20stir%20it%20nearly%20the%20entire%20time,%20it%20may%20scorch%20and%20stick%20to%20the%20pan.%3C/p%3E%3Cp%3EChocolate%20lava...mmmm...%3C/p%3E%3Cp%3EOnce%20it's%20cooked,%20add%20a%20little:%3C/p%3E%3Cp%3EStir%20in%20the%20vanilla%20and%20pour%20the%20pudding%20into%20serving%20dishes.%20If%20you%20don't%20want%20the%20top%20of%20the%20pudding%20to%20dry%20out,%20put%20plastic%20wrap%20directly%20on%20it.%20If%20that%20doesn't%20bother%20you,%20then%20let%20it%20cool%20a%20bit,%20then%20refrigerate.%20Congratulations%20-%20you%20have%20pudding!%3C/p%3E%3Cp%3EAnd%20I%20guess%20I%20was%20so%20happy%20about%20having%20pudding%20that%20I%20forgot%20to%20take%20the%20final%20pretty%20photo%20of%20dark,%20silky%20pudding%20in%20dessert%20dishes.%20Oopsie.%3C/p%3E%3Cp%3EA%20few%20things%20you%20need%20to%20know:%3C/p%3E%3Cp%3E1.%20Companies%20that%20sell%20little%20boxes%20of%20cook%20and%20serve%20pudding%20use%20'modified%20food%20starch'%20instead%20of%20corn%20starch.%20Corn%20starch%20is%20much%20more%20readily%20available%20(and%20much%20more%20affordable)%20to%20the%20home%20cook,%20but%20it%20does%20'break'.%20If%20you%20stir%20a%20cornstarch%20pudding%20after%20it%20cools,%20it%20can%20get%20watery.%20It%20can%20also%20crack%20if%20it%20dries%20out.%20If%20you%20just%20put%20the%20pudding%20into%20individual%20dessert%20bowls,%20the%20cornstarch%20works%20fine.%20You%20can%20make%20this%20pudding%20with%20modified%20food%20starch%20-%20you'll%20want%20a%20product%20called%20'clear%20jel'.%20It's%20awesome,%20but%20pricey,%20and%20most%20of%20y'all%20will%20have%20to%20order%20it%20online.%20The%20non-instant%20clear%20jel%20is%20safety%20approved%20for%20home%20canning%20(you%20can't%20can%20pudding,%20but%20you%20can%20make%20and%20can%20homemade%20pie%20fillings!),%20and%20I%20love%20it%20for%20that%20purpose.%20Just%20FYI.%3C/p%3E%3Cp%3E2.%20I%20use%20Morning%20Moo.%20I%20haven't%20tried%20using%20any%20other%20brand%20of%20powdered%20milk,%20so%20I%20don't%20know%20how%20it%20will%20turn%20out%20with%20another%20brand.%20If%20you%20use%20a%20different%20one,%20you%20may%20want%20to%20make%20the%20milk,%20then%20make%20pudding,%20rather%20than%20just%20tossing%20in%20the%20powder.%20Or%20not.%20I%20just%20don't%20know.%20Also,%20the%20measurement%20in%20the%20recipe%20for%20Morning%20Moo%20is%20a%20starting%20point.%20If%20you%20want%20it%20richer,%20toss%20in%20a%20little%20more.%3C/p%3E%3Cp%3E3.%20We%20like%20our%20chocolate%20pudding%20a%20little%20on%20the%20dark%20side,%20and%20a%20little%20less%20sweet.%20If%20you%20want%20it%20sweeter,%20add%20an%20extra%20spoonful%20of%20sugar%20(the%20next%20time%20you%20make%20it%20-%20I'm%20not%20sure%20you%20can%20just%20dump%20it%20in%20at%20the%20end)%20and%20decrease%20the%20cocoa%20a%20bit.%3C/p%3E%3Cp%3EAnd%20finally,%20the%20recipe!%3C/p%3E%3Cp%3EHasty%20Chocolate%20Pudding%3C/p%3E%3Cp%3E4%20servings%3C/p%3E%3Cp%3EIn%20a%20medium%20size%20saucepan%20with%20a%20heavy%20bottom,%20whisk%20together%20the%20dry%20ingredients.%20Whisk%20in%20milk%20or%20water%20a%20little%20at%20at%20time%20so%20the%20mixture%20does%20not%20have%20any%20dry%20lumps.%3C/p%3E%3Cp%3ECook%20over%20medium%20heat,%20stirring%20frequently.%20When%20it%20begins%20to%20bubble%20and%20boil,%20allow%20it%20to%20simmer%20for%201/2%20minutes,%20until%20shiny%20an%20thick.%3C/p%3E%3Cp%3EStir%20in%20vanilla.%3C/p%3E%3Cp%3ESpoon%20into%20individual%20serving%20bowls,%20small%20cups%20for%20lunches,%20etc.%3C/p%3E%3Cp%3EPlace%20a%20piece%20of%20plastic%20wrap%20directly%20on%20the%20surface%20of%20the%20pudding%20to%20prevent%20a%20skin%20from%20forming%20and%20chill%20in%20the%20refrigerator.%20Serve%20cold.%3C/p%3E){kind=link}
