- 2 scallions, thinly sliced
- Juice of 1/2 lemon (plus a little lemon zest, why not!)
- 1/4 C parsley leaves
- 1 T olive oil
- 1 T Greek yogurt
- 2 T whole grain mustard
- 1 t salt (or more to taste)
- Fresh ground black pepper
- Cabbage Reduction:
- ~2 C red cabbage juice
- Juice from 1/2 an apple
