Holiday Egg Nog

The Youngest is a huge fan of egg nog and he loves the stuff you buy in the carton at the store–ewww, a fan of store bought, I am not, so I went on a quest to make it from scratch and it really isn’t that hard and you can control how much fat and sugar you put into it which makes me happy. The true test– the Youngest thought it was “pretty rad” (I think that’s a thumbs up)…

Holiday Egg Nog

Yield: 4 servings

Prepare an ice-water bath. Beat the egg yolks and sugar together with an electric mixer on medium-high until the mixture is very thick and pale yellow, about 4-5 minutes. Transfer the mixture to heavy 3-quart saucepan. Slowly whisk in 2 cups of the milk until well incorporated.

Cook the mixture over low that, stirring constantly, until it is thick-about 20 minutes. Remove form the that and immediately stir in 1 cup of the heavy cream. Pour the mixture through a fine-mesh sieve into a medium-size bowl and set the blow in the ice bath until the mixture has chilled-about 15 minutes, stirring once in a while.

Stir in the remaining 1 1/2 cups milk and additional heavy cream, to taste. Chill and top with freshly grated nutmeg when serving.
