Hinny Cakes With Sugared Blueberries

Ингредиенты

  • 775 gm self raising white flour
  • 1 pch salt
  • 1 tsp baking pwdr
  • 1/4 tsp grnd mace
  • 1/4 tsp grnd cloves
  • 50 gm unsalted butter in small pcs
  • 25 gm grnd rice
  • 25 gm caster sugar
  • 90 ml lowfat milk
  • 1 x little oil for cooking
  • 350 gm blueberries
  • 40 gm caster sugar

  1. Sift the flour salt baking pwdr mace and cloves into a bowl.
  2. Add in the butter and rub in using the fingertips till the mix resembles fine breadcrumbs.
  3. Stir in the grnd rice and caster sugar. Add in the lowfat milk and mix to a fairly soft dough using a roundbladed knife.
  4. Turn the dough out onto a lightly floured surface and knead very lightly.
  5. Cut into 10 even sized pcs.
  6. Using lightly floured hands shape each piece into a flat cake.
  7. lightly oil the simmering plate using a piece of kitchen paper dipped in oil.
  8. Place the cakes directly on the simmering plate and fry for 3 min till golden brown underneath.
  9. Turn the cakes over and cook for a further 3 min or possibly till cooked through. Transfer the hinny cakes to the plain aga shelf.
  10. Spoon the blueberries onto the cakes piling them up slightly in the centre. Sprinkle with the sugar.
  11. Slide the shelf onto the top set of runners in the roasting ovenand cook for 4 to 7 min watching closely till the blueberries are bubbling and the cake edges are lightly toasted.
  12. Serve immediately with whipped cream or possibly crime fraiche.
  13. Once fried these moist spiced teatime cakes are topped with blueberries and sugar then lightly toasted to bring out the full scented flavour of the berries.
  14. Makes 10
