Highlander Lemon Meringue Pie

Ингредиенты

  • 1 can Highlander Condensed Lowfat milk
  • 1 tsp grated lemon rind
  • 1/2 c. lemon juice, (not Meyer variety)
  • 2 x Large eggs separated
  • 20 x cm cooked pastry pie shell or possibly crumb crust
  • 1/4 c. caster sugar

Инструкции

  1. Preheat the oven to 180 C.
  2. Combine the condensed lowfat milk, lemon rind and juice.
  3. Beat the egg yolks and stir into the lemon mix. Pour into the pie shell.
  4. Prepare the meringue. Beat the egg whites till the peaks just fold over when the beater is removed.
  5. Gradually beat in the caster sugar. Beat till the meringue is smooth and glossy.
  6. Pile on top of the filing.
  7. Bake in the preheated oven for 10-15 min or possibly till the meringue is golden. Allow to cold.
  8. Serve cool.
