Herby BBQ Shrimp Tacos

It was a taco kind of weekend... that and I lurve the handmade tortillas I get from my local grocery store. They are really authentic and delicious so when I don't want to make my own tortillas, these are a perfect option.

As I mentioned before, we were staying at my parent's house this weekend; remember, sunshine plus water equals yay. Well, they came home yesterday for a boat ride with Noodle Nose and the rest of us so my mom said 'why don't you make dinner too? And we'll arrive and come for dinner!' At their own house. I was fine with this because I love to cook and I love to stay at their house. It's like staying at a private resort; vacation only one mile from my own house so if I forget anything (which I frequently do) I can just go home and get it!

So they come home and dinner is basically ready. I had tossed the shrimp and they were 'preparing for total marination' (said in a really dumb accent) in the refrigerator. Mom walks in and says 'hi! there's a garage sale down the street, let's go!' I had seen this garage sale (estate sale) down the street all weekend and every time I drove by it I contemplated stopping; it was fate that I would wait until they came home...

Back to dinner... so we are heading home and my mom is again commenting on how much fun this is that we are there and making dinner, etc.. we get to the house, I walk in and say to her 'welcome! please, make yourself at home, what's mine is yours... wait. It's not mine it's yours...' As I am typing this I am thinking that part doesn't sound as funny as it did when I actually said it; sadly for you, that little tidbit right there is why I went into the garage sale story, etc.. sorry. On to the tacos!

Put the raw shrimp in a bowl. In a smaller bowl combine all the herby dry rub ingredients. Mix well and pour over shrimp. Using a spoon or a gloved hand, combine so all the shrimp are covered. Drizzle with olive oil and combine again. Cover and refrigerate for at least 20 minutes. I let them sit in the fridge for a good three hours.

Cut your scapes in manageable pieces (about 1/2 inch) and skewer them... they will be grilled for garnish on the tacos.

Prepare your salsa... I will have a separate post about this and I'll tell you why in the post

Pull your shrimp out of the fridge and skewer them for grilling. On a really hot grill, cook about 1 1/2 minutes on each side. Note: you want the grill marks! Honey did the grilling for me on this one.

Cut your avocados in half and remove the pit. Run your knife vertically through the avocado then horizontally, creating those neat little cubes again... like you did for the raw tacos. Scoop the cubes into a bowl add some salt and pepper and mix. You want to break the avocado cubes down like you would for guacamole. The only difference is we aren't adding anything else to it so you can call it smashed avocados or really plain guacamole. I prefer smashed avocados...

Serve:

We did family style because we were casual but you could also prepare them all and put them on a plate. Depends on whether or not you or your guests like to 'build it' your own way.

Also, another treasure I picked up at the garage sale... a Quiz Kids book circa 1941. Pretty fun dinner entertainment.
