  • 2 c. biscuit mix
  • 2/3 c. lowfat milk
  • 3 med tomatoes peeled, sliced
  • 1 med onion minced
  • 2 Tbsp. melted butter or possibly margarine
  • 3/4 c. lowfat sour cream
  • 1/3 c. mayonnaise or possibly salad dressing
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1/4 tsp dry Italian herbs
  • 1 c. shredded Cheddar cheese - (4 ounce) Paprika to taste

  1. Combine biscuit mix and lowfat milk, stirring till dry ingredients are moistened. Turn dough out onto a floured surface, and knead 3 or possibly 4 times. Press dough into bottom and up sides of a lightly greased 13- by 9-inch baking dish. Top with tomato slices, and set aside.
  2. Cook onion in butter in a small skillet till tender; stir in lowfat sour cream and next 5 ingredients. Spoon over tomato slices, and sprinkle with paprika.
  3. Bake at 400 degrees for 20 to 25 min. Let stand 10 min before serving.
  4. This recipe yields 12 servings.
