Рецепт Herb Stuffed Pork Tenderloin (with photos)
This recipe is an adaptation from an old cookbook titled Low-Fat and Luscious (an old BHGardens book). This tenderloin is quite easy to prepare.
Marvelously, this pleasing herb stuffed loin is also both low fat and low calorie. The entire assembled tenderloin is 810 calories. If the pork is to serve 4, then that’s only 200 calories per serving.
Herb Stuffed Pork Tenderloin
INGREDIENTS
- 1lb pork tenderloin, trimmed
- 3 C greenery – spinach, herbs (dill), arugula mix
- 1/4 c Italian seasoned bread crumbs
- 1 egg white only
- 2 T stone ground mustard
- salt, pepper
1. Finely chop 3 C of washed greens.
2. Add to greens bread crumbs and egg white. Mix until all ingredients are combined.
3. With a sharp knife, butterfly tenderloin.
4. Between 2 pieces of plastic wrap (or waxed paper) pound tenderloin to approximately 1/4 inch thick.
5. Spread 2 T mustard over thin pork.
6. Spread the greens mixture evenly over the mustard prepared tenderloin.
7. Roll jelly roll style and secure with toothpicks or butchers’ twine.
8. Place into a preheated 375 degree oven for 50-60 minutes.
9. Remove from the oven, take out the toothpicks or clip twin, slice, and plate.
Serve with a mustard cream sauce, if desired or drizzle a little bit of honey over the meat to heighten the sweetness of the pork.
