- TURKEY: Preheat oven to 325 degrees. Butter 1 qt covered casserole dish.
- Combine first 8 ingredients. Carefully separate skin from turkey. Spread 1/2 of the butter mix between skin and meat. Rub remaining butter mix over turkey skin. Fill turkey with stuffing. Transfer remaining stuffing to dish, chill. Place turkey on rack in roasting pan. Roast 3 hrs, 45 min. Place dish with stuffing in oven 30 minutes. Let turkey stand 15 minutes.
- GRAVY: Skim fat from pan juices into pot. Heat, whisk in flour till smooth.
- Stir in broth, pepper and salt. Cook till thickened.
- Makes 12 servings.
