- Put 1 stick butter in a frying pan. Add in onions, leeks, shallots and rice. Put over moderate heat, watch carefully as the onions brown easily. Add in more butter if necessary; it will all be absorbed. Cook till rice is browned; watch which is does not burn. Pour 2 c. chicken broth over the whole, add in salt and cover. Cook till rice tests done. Add in mixed herbs and a tsp. of butter.
