- 3 tbsp. sugar
- 3 c. hot water
- 3 Packages dry yeast or possibly 2 (2 1/2 ounce.) cake yeast
- 3 tbsp. oil
- 1 tbsp. parsley
- 1 tbsp. oregano
- 3/4 c. Parmesan cheese
- 1/2 tbsp. salt
- 8 to 10 c. white flour

- Proof the yeast in hot water with sugar, then combine with the other ingredients in the bowl of a mixer. Work in 5 to 6 c. of the flour and beat on medium speed till the dough is very smooth. Turn the mixer down to low and add in the rest of the flour as needed, 3 to 4 c.. The dough is much stickier than most others, so add in only sufficient flour to be able to handle the dough. Divide the batter and shape into loaves. Put right into greased loaf pans, rise, and bake at 375 degrees for 50 to 60 min. Makes 2 loaves.
