  • 8 ounce Fresh whole white/button Monterey Mushrooms
  • 3/4 c. Water
  • 1/2 c. White wine vinegar
  • 1/2 c. Extra virgin olive oil
  • 3 x Cloves garlic, lightly crushed
  • 1/2 tsp Coarse black pepper or possibly crushed red pepper Salt to taste
  • 1 Tbsp. Minced fresh herbs of your choice (oregano, thyme, tarragon, basil, dill weed) or possibly 1 tsp. dry herbs Fresh herb sprigs, (optional

Инструкции

  1. In saucepan combine water; vinegar, oil, garlic, pepper and salt. Bring to boil; reduce heat and simmer 10 min. Add in mushrooms and minced herbs; set aside to cold, stirring occasionally. Spoon cooled mushrooms into jar, packing snugly. Pour liquid over mushrooms to cover. Tuck a sprig or possibly two of fresh herb into jar, if you like. Cover, chill at least 24 hrs.
  2. Bring to room temperature before serving.
  3. Makes two 8-oz jars.
