Herb Braised Pork Chops with Creamy Onion Gravy

So simple, yet so delicious. These pork chops braise in an herb-infused stock and are topped off with a creamy and savoury onion gravy.
One of my favorite things to eat is pork chops.
Since I buy them in bulk when they are on sale at often ridiculously cheap prices, I always have plenty on hand. Since I buy a lot in bulk, I make sure to vacuum seal all my meat before I freeze it. I have this sealer and it has saved me lots of money I wasted when stuff got freezer burn.

%20a%20few%20months%20ago.%20One%20thing%20I%20try%20to%20do%20is%20make%20them%20different%20ways%20and%20I%20wrack%20my%20brain%20sometimes%20trying%20to%20come%20up%20with%20something%20different%20and%20tasty.%3C/p%3E%3Cp%3EMy%20inspiration%20for%20these%20comes%20from%20my%20friend%20Lillian%20who%20blogs%20over%20at%20My%20Recipe%20Journey.%20Lillian%20and%20her%20family%20love%20pork%20chops%20too%20so%20she%E2%80%99s%20always%20making%20them.%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20say%20that%20I%20got%20this%20one%20from%20Lillian,%20but%20just%20thinking%20about%20her%20brought%20up%20the%20idea%20for%20these.%20I%20call%20her%20my%20%E2%80%9Cmuse%E2%80%9D%20and%20this%20proves%20it!!!%3C/p%3E%3Cp%3EThe%20herb(s)%20you%20use%20here%20for%20the%20infusion%E2%80%93just%20a%20fancy%20word%20for%20letting%20the%20chops%20braise%20in%20the%20flavored%20stock%E2%80%93is%20up%20to%20you.%20I%20love%20thyme%20so%20that%E2%80%99s%20what%20I%20used.%20Sage%20would%20be%20really%20good%20too%20since%20it%E2%80%99s%20a%20traditional%20herb%20used%20with%20pork.%20But%20don%E2%80%99t%20be%20afraid%20to%20get%20adventurous%20and%20use%20something%20you%20like%20or%20that%E2%80%99s%20really%20different.%20Only%20thing%20I%20would%20caution%20when%20adding%20any%20herb%20is%20to%20start%20with%20a%20pinch%E2%80%93then%20taste.%20Some%20herbs,%20especially%20sage%20and%20rosemary,%20can%20be%20quite%20strong.%20Remember%20you%20can%20always%20add%20more!%3C/p%3E%3Cp%3EThe%20onion%20also%20adds%20to%20the%20great%20flavor%20of%20the%20gravy.%20This%20gravy%20was%20SO%20yummy,%20I%20actually%20licked%20the%20plate!%20I%20would%20say%20that%20the%20excellent%20flavor%20was%20partly%20due%20to%20the%20chops%20being%20bone-in.%20I%20prefer%20bone-in%20chops%20for%20many%20reasons,%20but%20in%20any%20braised%20dish,%20the%20presence%20of%20the%20bone%20is%20responsible%20for%20plenty%20of%20flavor.%3C/p%3E%3Cp%3EI%20tend%20to%20reduce%20any%20stock%20I%20get%20from%20this%20cooking%20method%20because%20not%20only%20does%20it%20taste%20better,%20but%20most%20times%20the%20reduction%20is%20thick%20enough%20that%20the%20%E2%80%9Cgravy%E2%80%9D%20doesn%E2%80%99t%20require%20any%20thickening%20for%20the%20proper%20consistency.%20However,%20if%20you%20are%20pressed%20for%20time,%20it%E2%80%99s%20totally%20OK%20to%20thicken%20this%20with%20flour%20or%20cornstarch.%20I%20always%20keep%20a%20can%20of%20Wondra%20just%20for%20this%20purpose!%3C/p%3E%3Cp%3EThe%20au%20jus%20gravy%20mix%20added%20just%20enough%20salt%20for%20my%20taste,%20but%20taste%20the%20stock%20after%20the%2020%20minute%20cook%20time%20for%20the%20chops%20and%20you%20can%20add%20additional%20salt%20then.%3C/p%3E%3Cp%3EHerb%20Braised%20Pork%20Chops%20with%20Creamy%20Onion%20Gravy%20%20%20%20%20%20%20%20Author:%20Judith%20Hannemann%20Serves:%204%20%20%20Ingredients%3C/p%3E%3Cp%3E4%20large%20bone-in%20center-cut%20rib%20pork%20chops%20(about%20%C2%BD-inch%20thick)%202%20tbs%20butter%201%20small%20onion,%20chopped%201%C2%BD%20cups%20chicken%20stock%20(I%20use%20unsalted)%20%C2%BD%20tsp%20thyme%20(or%20herb%20of%20your%20choice)%202%20tbs%20au%20jus%20gravy%20mix%20%C2%BC%20cup%20cream%20(preferably%20heavy%20cream)*%3C/p%3E%3Cp%3EOptional%20Thickening:%202%20tbs%20flour%20mixed%20with%20%C2%BC%20cup%20water%20-OR-%202%20tbs%20cornstarch%20mixed%20with%20%C2%BC%20cup%20water%20%20%20Instructions%3C/p%3E%3Cp%3EIf%20using%20half-and-half%20or%20light%20cream,%20you%20may%20need%20to%20thicken.%20Melt%20butter%20in%20a%20large%20skillet%20over%20medium%20heat.%20Brown%20pork%20chops%20well%20on%20all%20sides--you%20may%20have%20to%20do%20this%20in%20shifts%20depending%20on%20how%20large%20your%20chops%20are%20Remove%20browned%20pork%20chops%20from%20pan%20and%20set%20aside.%20Add%20onion%20to%20the%20same%20pan%20and%20saute%20over%20medium-low%20heat%20until%20onions%20are%20translucent.%20Add%20the%20stock,%20thyme%20(or%20herb%20of%20choice)%20and%20the%20au%20jus%20mix;%20stir%20to%20blend.%20Add%20pork%20chops%20back%20to%20the%20pan%20and%20bring%20to%20a%20boil.%20Reduce%20the%20heat%20to%20low,%20cover%20and%20cook%20for%2020%20minutes.%20The%20au%20jus%20gravy%20mix%20added%20enough%20salt%20for%20my%20taste,%20but%20taste%20the%20liquid%20at%20this%20point%20to%20see%20if%20you%20need%20to%20add%20any%20to%20your%20own%20taste.%20TO%20MAKE%20GRAVY%20Remove%20pork%20chops%20to%20a%20plate%20and%20keep%20warm%20(I%20usually%20put%20them%20on%20an%20oven-proof%20plate%20and%20pop%20them%20in%20a%20200F%20oven).%20Turn%20heat%20to%20medium-high,%20add%20the%20cream,%20stirring%20to%20blend%20it%20well,%20and%20allow%20the%20liquid%20to%20reduce%20by%20about%20one%20third.%20This%20should%20take%20about%208-10%20minutes.%20Thicken%20if%20you%20want%20thicker%20gravy.%20SLOW%20COOKER%20DIRECTIONS%20Brown%20chops%20as%20in%20original%20recipe.%20Set%20aside.%20Deglaze%20browning%20skillet%20with%20stock.%20Add%20stock,%20chopped%20onions,%20au%20jus%20mix%20and%20herb(s)%2
