- Chop the apples instead of slicing them so you can pack the topping around them easier.
- 3/4 cup applesauce (organic no sugar added)
- 1 teaspoon vanilla
- 1 9-inch pie shell, unbaked
- Pie filling.
- For Topping:
- 1 cup all purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon fine sea salt
- 6 tablespoons chilled butter, cut into small cubes

%20%20Arkansas%20Black%20Apples%20are%20very%20tart%20and%20firm%E2%80%94a%20great%20specimen%20for%20pie!%3C/p%3E%3Cp%3EArkansas%20Black%20Apples%20getting%20ready%20for%20a%20pie.%3C/p%3E%3Cp%3EApple%20pie,%20as%20you%20recall,%20is%20a%20favorite%20in%20this%20household,%20so%20I%20decided%20to%20whip%20one%20up%20when%20we%20got%20home.%20%20I%20put%20a%20couple%20of%20recipes%20together,%20a%20recipe%20from%20Paula%20Dean%20that%20includes%20applesauce%20(so%20I%20can%20use%20up%20some%20more%20winnings)%20and%20a%20recipe%20from%20Jeane%20Kelley%E2%80%99s%20book%20Blue%20Eggs%20and%20Yellow%20Tomatoes.%20%20I%20used%20the%20crumb%20topping%20from%20her%20Cinnamon%20Crumb%20Apple%20Pie.%20%20(We%20actually%20had%20dinner%20with%20her%20in%20September%202009.%20%20She%20is%20an%20interesting%20person%20with%20a%20sharp%20wit.)%3C/p%3E%3Cp%3EHere%20is%20my%20revision:%3C/p%3E%3Cp%3EArkansas%20Black%20Apple%20Pie%20with%20Crumb%20Topping%3C/p%3E%3Cp%3EFor%20Pie:%3C/p%3E%3Cp%3ECombine%20flour,%20sugars,%20cinnamon%20and%20sea%20salt%20in%20a%20food%20processor.%20%20Add%20butter%20cubes%20and%20pulse%20until%20it%20is%20the%20consistency%20of%20fine%20corn%20meal.%20%20Pack%20topping%20over%20and%20around%20apples.%20(You%20will%20initially%20think%20there%20is%20too%20much%20topping,%20so%20pack%20it%20in%20really%20well.)%20%20Place%20pie%20on%20a%20large%20baking%20sheet%20in%20case%20it%20bubbles%20over%20in%20the%20oven.%20%20Bake%20until%20topping%20is%20golden,%20about%2040%20minutes.%20%20Reduce%20oven%20temperature%20to%20350%20degrees%20and%20bake%20for%20another%2040%20minutes%20or%20until%20apples%20are%20done.%3C/p%3E%3Cp%3EReady%20for%20the%20oven.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20on%20wire%20rack.%3C/p%3E%3Cp%3EHow%20good%20would%20this%20be%20with%20homemade%20vanilla%20ice%20cream?%20%20(I%20am%20sure%20it%20would%20be%20wonderful,%20but%20the%20ice%20cream%20production%20will%20have%20to%20wait%20for%20another%20night.)%3C/p%3E%3Cp%3EYou%20can%20see%20why%20you%20need%20to%20put%20this%20on%20a%20baking%20sheet.%20Note%20the%20spillage!%3C/p%3E%3Cp%3EApples%3C/p%3E){kind=link}
