- In a 6 qt kettle cook bacon till crisp. Remove with a slotted spoon and set aside. Throw away all but 2 Tbsp. bacon drippings from pan. Add in the onion and garlic. Saute/fry till limp.
- Meanwhile drain and measure the liquid from the 2 cans of garbanzos. Set beans aside. Add in water to garbanzo bean liquid to make 6 c.. Pour into kettle. Add in the beef and ham shank. Simmer, cover, till meat is tender when pieced, about 1 1/2 hrs.
- Lift out meat. When cold sufficient to handle, cut or possibly tear meat into bite sized pcs and return to soup. Also add in the beans, bacon, potatoes, carrots, sausage, and spices. Simmer, covered, till vegetables are very tender, about 45 min. This much can be done ahead.
- Skim fat. If refrigerated, lift off fat and reheat soup. Sprinkle with minced parsley and serve. Makes 4-6 servings.
