Healthy Soft and Chewy Oatmeal Chocolate Chip Cookies
Recipe Adapted from Amy's Healthy Baking
Makes: 15 cookies
Time: Under 1 hour (10 mins to Mix + 30 mins to Chill + 11 mins to Bake)
Notes:
* I tried the recipe replacing same amount of raisins and they turned out equally good.
* The original recipe made use of instant oats and I used with rolled oats for a nuttier texture. No changes in the bake time was required.
* The
original recipe used agave and I replaced it with honey. Amy says:
Alternatively, 1/2 cup brown sugar + 5 tablespoons milk can be used as
well.
* Store the cookies in an air tight container and they will stay good for a week (if they last that long, of course!).
Ingredients:
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1.5 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/8 tsp salt
- 2 tbsp coconut oil (or unsalted butter), melted
- 1 egg, room temperature
- 1 tsp vanilla extract
- 1/2 cup honey
- 1/4 cup semi-sweet chocolate chips
Preparation:
In Bowl 1, mix all dry ingredients - oats, flour, baking powder, cinnamon, chocolate chips and salt. Set aside.
In
Bowl 2, whisk all wet ingredients - coconut oil, egg, honey and vanilla
extract. Now, add dry mixture and give it a good stir until everything
is incorporated. Chill for 30 minutes.
Preheat the oven to 325°F, and grease a baking sheet with cooking spray or line with parchment paper/silicone baking mat.
Spoon
a tablespoon of cookie dough on the baking sheet and flatten slightly.
Bake for 7 minutes. Turn the baking sheet around (for even baking) and
then bake for 4-5 minutes until the edges are slightly browned. Using a
flat spatula, gently transfer on to a wire rack and let them cool before
you pop a cookie in your mouth.
Please note the cookies will be soft
once they come out of the oven. Don't worry. They will firm up once
cooled. Don't be tempted to bake longer.
