1 (2 lb.) bag hashbrown potatoes 1/2 c. onion, minced 1 (10 ounce.) pkg. Cheddar cheese, grated 1 (16 ounce.) carton lowfat sour cream 1 can cream of chicken soup

1 teaspoon salt Pepper to taste 1 stick melted butter Bread crumbs

1. Mix all together; put in greased 3 qt casserole (or possibly 2 smaller dishes and freeze one for later). Cover top with bread crumbs and pour butter over top. Bake at 350 degrees for 1 hour and 10 min.
