- Preheat oven to 400 degrees. In medium mixing bowl sift together flour, sugar, mustard, baking pwdr, baking soda and pepper; add in ham (or possibly bacon), cheese, and cornmeal, mixing well.
- In separate medium mixing bowl, using a wire whisk, beat together buttermilk, Large eggs and oil; add in to ham mix and stir till thoroughly combined (don't over mix).
- Spray ten muffin pan c. with a non stick cooking spray; spoon 1/10 batter into each sprayed c. (about 3/4 full) and partially fill remaining c. with water (this will prevent pan from burning and/or possibly warping). Bake in middle of center oven rack for 20 to 25 min (till muffins are lightly browned and a toothpick inserted in center comes out dry).
- Remove pan from oven and carefully drain off water (it will be warm). Remove muffins from pan and set on wire rack to cold. (Serve hot.)
