Summer just arrived in the Northwest and once again I managed to fall short of my annual desire to be a boat-show-model...oh well, at least I'm qualified to wear shorts (those with a fluorescent skin rating of ten or above are cautioned against wearing shorts for the reflective damage they're skin can cause to others...I eeked in under a nine this year!) And if I'm in shorts then you know it's hot out...80 degrees is hot, at least for us who never see the mercury rise above 50 degrees for ten months of the year! So there is no cooking going on around here!

This is the perfect hot-weather meal...one dish so full of flavor and completely satisfying it will win over those who normally turn their noses up at salads for dinner...like the mister, who still expects me to slave over the stove on his behalf, no matter what the temp, "Woman, I am ready for my feast and my grog!" Well, he did feast...at first he rolled his eyes, as always, and whined, he was expecting more...but as he ate this delicious salad he found his more...and then some. Fresh cantaloupe, watermelon, peaches and blueberries mixed with spring greens, mint, smoked ham and Parmesan cheese - then it's all tossed with a light dressing that will have you lickin' your lips as the pounds skip your hips...yes! It's diet-friendly!! Wooo-Hooo!! Tasty, low-cal and easy...this is so refreshing and cool, the perfect meal for a hot day - I could eat this every day - and if I did, I just might be boat-show-model material by next summer!

Combine watermelon, cantaloupe, peaches, blueberries, onion, ham, Parmesan cheese, mint, and greens in a large bowl. In a small bowl combine salt, pepper, lemon juice, olive oil and honey and mix well to combine. Pour dressing over greens and fruit mixture and toss to coat. Serves 4.
