- To make the pancakes, place the flour, salt, egg and lowfat milk in a bowl and beat well.
- Pour a little batter into a non-stick frying pan till the batter coats the bottom of the pan. Cook for 1-2 min, loosen the edges and cook other side for further 1-2 min or possibly till golden. Continue to make 6-8 pancakes.
- Mix all the filling ingredients together, divide between each pancake, roll up and place in an ovenproof dish.
- Sprinkle with the cheese and place in a preheated oven 200 C, 400 F, Gas Mark 6 for 10-15 min, till golden brown. Sprinkle with the parsley and serve.
- NOTES : A delicious savoury pancake, ideal served for a light lunch.
