- Powder the cardomom seeds with the sugar and keep aside...
- For the jamuns,place all the remaining ingredients in a large bowl..Knead in to a smooth dough..The dough must be lump free..Divide the dough in to 30 equal portions..Shape them in to small lime sized balls..
- Heat a non stick pan and pour enough oil or ghee so that the jamuns can be immersed well for frying...Remember -jamuns increase in size while frying...Reduce the heat and fry jamuns in sets of 5 till they are golden brown in colour..Turn them over while they are in the oil/ghee so that they will get the uniform colour throughout...Fry all the jamuns the same way and place them on an oil absorbent paper/tissue...
- To make the syrup-Pour the water and sugar in to another pan and keep on medium flame...keep stirring till all the sugar is dissolved in the water...Add rose essence..Add also a pinch of salt and cardamom peels for extra flavor..Can also add kumkum poo..Simmer on low flame till the syrup thickens...Transfer the jamuns in to the warm syrup..
- Jamuns are ready!!
