Ингредиенты

  • 1 c. Any small to medium sized pasta
  • 1 Tbsp. Extra virgin olive oil
  • 1 x To 2 cloves garlic,chopped
  • 1 lrg Onion, minced
  • 3 stalk celery, diagonally sliced
  • 1 x Sweet pepper (any color), minced
  • 1 Tbsp. Beau Monde seasoning or possibly seasoning salt
  • 1 can (19 ounce.) tomatoes
  • 3 c. Chicken broth
  • 12 x Mushrooms, quartered
  • 1 c. Cauliflower florets
  • 1/4 c. Minced fresh basil (or possibly 1 Tbsp. dry)
  • 1/4 c. Minced fresh parsley
  • 2 sm Zucchini, diagonally sliced Freshly grnd pepper
  • 1 Tbsp. Fresh lemon juice Freshly grated Parmesan cheese (optional)

Инструкции

  1. Cook the pasta in boiling, salted water till al dente. Drain and set aside. Heat oil in a large saucepan. Saute/fry garlic, onion and celery over medium heat for 5 min or possibly till soft but not brown. Add in sweet pepper; saute/fry for 3 min longer. Add in Beau Monde, tomatoes and chicken broth.
  2. Bring to a simmer and cook for 15 to 20 min. Add in mushrooms, cauliflower, basil and parsley. Simmer for 10 min. Add in zucchini; cook just till tender. Add in pepper, lemon juice and cooked pasta. Pass Parmesan cheese separately at the table if you like.
  3. Serves 4 to 6
