Рецепт Ground Pork and Tomatillo Chili
Here is another fantastic chili recipe from Eating Well Magazine’s October 2013 article “Chili off the Charts.” The article as I mentioned in a previous post lists several different versions of chili with five basic steps. This version is my favorite. The ground pork combined with the spice of hot peppers along the sweetness of the tomatillo makes a very interesting blend of flavors. I’ve made a few changes to ingredients since we like our chili hot and on the dry side rather than soupy. Either way that you choose to make this dish, serve topped with slices of avocado, a dash of cheese, onions, and Greek yogurt and you will be in chili heaven! Ground Pork and Tomatillo Chili
INGREDIENTS
- 2 Tablespoons Olive Oil
- 1 Pound of lean ground pork
- 1 Large onion, chopped
- 4 Cloves of garlic minced
- 1 Jalapeno pepper - diced
- 1 Red Bell Pepper -diced
- 1 Pound of fresh tomatillos chopped
- 2 Tablespoons of chopped chipolte peppers in adobo sauce
- 2 Teaspoons of cumin
- 2 Cups fresh chopped tomatoes or one 14 ounce can of tomatoes
- 3 Cups of black beans
INSTRUCTIONS
Heat one tablespoon of olive oil in a Dutch Oven and add pork, onions and garlic. Cook until pork is no longer pink.
Add the bell pepper and jalapeno, cook for about 5 minutes
Add the tomatillos, chipolte peppers, and cumin and mix well
Next stir in the tomatoes tomatoes and beans
Stir gently and simmer on low heat for at least 45 minutes.
