- Place zucchini and squash on large baking sheet, brush with 3 tbsp. of oil. Sprinkle with salt and pepper.
- Grill vegetables till tender and brown, about 10 min. Turn occasionally.
- Transfer to plate and cold.
- Cut vegetables diagonally into 1" pcs.
- Place in a large bowl and add in basil, Parmesan cheese, balsamic vinegar and remaining extra virgin olive oil.
- Toss and season to taste with salt and pepper.
