  • 28 x bamboo skewers - (10" long)
  • 3/4 lb grnd chuck
  • 3/4 lb grnd pork
  • 1 1/4 c. fine fresh bread crumbs
  • 1 lrg egg
  • 1/2 c. finely-minced onion
  • 1/2 tsp grnd allspice
  • 1 tsp salt Freshly-grnd black pepper to taste
  • 1/3 c. Dijon mustard
  • 1/3 c. brown sugar - (packed)
  • 3 Tbsp. cider vinegar
  • 2 Tbsp. finely-minced fresh flat-leaf parsley leaves
  • 2 med yellow squash
  • 1 x onion
  • 2 x yellow bell peppers
  • 1 pt vine-ripened yellow cherry tomatoes

  1. In a large dish soak bamboo skewers in hot water to cover for 30 min.
  2. Make meatballs: In a large bowl, with your hands, blend the meatball ingredients till just combined well (don't overmix). Form mix into 1 1/4-inch balls and arrange on a tray. Meatballs may be prepared up to this point 1 day ahead and chilled, covered.
  3. Make sauce: In a bowl whisk together all sauce ingredients till brown sugar is dissolved. Sauce maybe made 1 day ahead and chilled, covered.
  4. Halve squash lengthwise and cut crosswise into 1/2-inch thick pcs. Quarter onion and then cut the onion and bell peppers into 1-inch pcs.
  5. Assemble kebabs: Thread 2 meatballs alternately with assorted cut vegetables and tomatoes onto each skewer. Kebabs may be assembled 8 hrs ahead and chilled, covered.
  6. Prepare grill.
  7. Grill kebabs on an oiled rack set 5 to 6 inches over glowing coals, turning kebabs frequently, 10 min. Brush kebabs with sauce and grill, turning them and brushing frequently with the sauce and grill, till meatballs are cooked through, about 5 - 10 min more. (Alternatively, kebabs may be broiled under a preheated broiler about 3-inches from heat.) Throw away any remaining sauce.
  8. This recipe yields 10 to 12 servings.
