- Season steaks with pepper.
- Heat 60g (2oz) butter in large pan. Add in steaks, cook till done. Remove steaks from pan, keep hot, drain off butter from pan.
- Add in remaining butter to pan, stir till melted. Add in crushed garlic, cook 1 minute, add in tarragon and mustard, stir till smooth and combined. Add in brandy, cream, salt and pepper, stir sauce over low heat till sauce is reduced by half.
- Serve steaks with sauce spooned over.
- Serves 4.
