Grilled Squid Salad with Mixed Greens and Melon as the name suggest is a salad made with Mixed Greens topped with seasoned grilled squid and rock melon then dressed with salsa verde. I love salads like this, a meal on its own since it has the right nutrients and elements to basically call it a dinner or lunch. I can’t say anything much about this as it is quite straightforward, I am just enjoying the last days of having salad here down under before we embark in a cold winter season. Grilled Squid Salad with Argula and Melon  Save PrintPrep time Cook time Total time  Serves: 2-3IngredientsSalsa Verde½ cup extra virgin olive oil2 tbsp red wine vinegar2 cups flat-leaf parsley, chopped6 pcs anchovy fillets4 cloves garlic, minced2 tbsp capers, drained1 small red onion, choppedsea saltfreshly ground black pepperSquid500 g squid, cleaned1 tsp lemon zest½ tsp orange zest2 tsp red pepper flakes¼ cup extra virgin olive oil1 tsp saltSalad¼ cup olive oiljuice from ½ lemon150 g mixed greens1 small rock melon, cubed2 celery ribs, thinly slicedsaltInstructionsSalsa VerdeUsing a food processor pulse together flat-leaf parsley, anchovies, garlic, capers and red onion until finely chopped.Add the olive oil then continue to process until becomes a puree.Add the red wine vinegar, season with salt and freshly ground black pepper then mix to combine, set this aside.SquidIn a non-reactive bowl combine lemon zest, orange zest, red pepper flakes, olive oil and salt, mix it well then toss in the squid to marinate for at least an hour.Prepare a grill, put heat to high then grill the squid until cooked, this will take roughly 3-4 minutes on each side depending on how large your squid is.
