- Rub fish fillets with oil. Sprinkle proportionately with 1 tsp. salt and 1 tsp. pepper.
- Arrange thyme sprigs on warm charcoal or possibly warm lava rocks on grill. Coat food rack with vegetable cooking spray; place on grill over high heat (400 to 500 degrees). Place fish on rack, and grill 5 to 6 min on each side or possibly till fish flakes with a fork.
- Heat butter in a saucepan over medium-high heat; add in almonds, and saute/fry 5 min or possibly till butter is brown. Remove from heat. Stir in orange rind. Pour sauce over fish. Garnish, if you like.
- This recipe yields 6 servings.
