These Grilled Sausage Potato Foil Packets can double as an easy weeknight meal or a mostly make-ahead camping dinner. Thank you to The Little Potato Company for helping me share this recipe with you. I’m in a constant state of déjà vu now that we’ve moved to the Pacific Northwest. Sure, I grew up in the area (Vancouver) and came back for regular visits when we lived elsewhere for many years, but there are things I had forgotten. I blame it partly on the rainy city reputation that Seattle and Vancouver have. I allowed my brain to be overtaken by people asking me, “It’s so beautiful there, but how did you deal with all the rain?”, and shoved aside one of my favorite memories (and best kept secrets) of the Pacific Northwest. The secret? I almost don’t want to say this out loud because more people might flock here and fill up my favorite coffee shops and beaches. Yeah, just kidding. Kinda. But I have to tell you that summers in the Pacific Northwest are like no other. I had forgotten just how amazing they are. Temperatures in the 80s, cool breezes, bounties of fresh fruits and vegetables, refreshing lake and ocean swimming and blue, blue skies. I actually can’t remember the last time it rained. In Seattle! It was sometime before the Fourth of July, which was nearly three weeks ago. We are living the summertime dream, my friends! I urge you to make a trip up here in the summertime to experience it. Just be sure to leave some salmon and Rainier cherries for me. So what does one do when is rewarded with day after day of sunny days? Grill like you mean it! Burgers, salmon, veggies (grilled veggie tacos, anyone?) and so on. And since you’ll be enjoying the great outdoors, sitting around a campfire or two, foil packet dinners are where it’s at! A couple of weeks ago, I shared my Caprese Chicken Foil Packets, which I have made at least three times since then. But it’s almost impossible to talk about foil meals without mentioning potatoes. And sausages. Preferably together, like in these grilled sausage potato foil packets. They are the ultimate camping meal and just as ideal for an easy weeknight meal at home. The best sausage potato foil packets start with the best ingredients. I make sure there are always (ALWAYS!) packages of my favorite Little Potato Company Creamer potatoes in the house, which are ideal for this meal and some of my other favorite potato recipes. I used the gorgeous Something Blue varietal (seriously how pretty are they?!), but any of their Creamer potatoes would work. The Something Blue potatoes are on the bigger side, so I cut them in quarters. However, if you use some of the smaller varietals, cut them in half or even leave them whole, depending on the size. All of the Creamer potatoes have the same naturally sweet and pure flavors. You can’t go wrong. As for the sausages, there are a million and one precooked chicken sausages available at grocery stores, so choose your favorite. I used a spicy Italian flavor, which works well with the added garlic, paprika and oregano. If you used sausages with significantly different flavors, change up the spices to match. Little Potato Co. Creamer potatoes (I used Something Blue) 4 pre-cooked chicken sausages, cut into ¾-inch circles 2 red bell peppers, cut into 1-inch pieces 1 yellow onion, cut into 1-inch pieces 4 tsp olive oil 4 garlic cloves, minced 1 ½ tsp dried oregano 1 ½ tsp paprika ½ tsp salt ½ tsp ground pepper ¼ cup minced flat leaf parsley Instructions Preheat the grill to medium-high heat. Cut the Creamer potatoes into halves or quarters, depending on the size of the potatoes. (The Something Blue potatoes are on the larger side, so I cut them into quarters.) In a medium bowl, stir together the potatoes, sausages, bell pepper, onion, olive oil, garlic, oregano, paprika, salt and pepper. Using 2 pieces of foil per packet (each 12 to 15 inches long), for a total of 4 packets, form an X by overlapping the foil. Alternatively, use one bigger sheet of heavy duty foil for each packet. Divide the potato mixture into 4 portions and place in the middle of each foil X. Wrap the foil over each portion, pinching to seal. Place the foil directly on the grill and cook until the potatoes are tender and starting to brown, about 30 minutes. Carefully unwrap the foil, garnish with parsley if desired, and serve.
