Рецепт Grilled Salmon with Mediterranean Salsa, the chauffeur
I got the idea for this from Chef Dennis.
The recipe is changed, of course…. to what I had in the pantry since I already had the salmon. Next time I may add the feta like he did.
And he used parsley….. Mine isn’t big enough to cut yet but I have lots of oregano.
But that’s what recipes are, right?
A jumping off point for what we have in our own pantries.
Grilled Salmon with Mediterranean Salsa
Total time: 20 minutes
Ingredients:
- 2 salmon fillets, 12oz (360gr) total weight
- 1 tsp dill weed
- 1/4 tsp sea salt
- Mediterranean Salsa:
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup dry-cured Greek olives, chopped
- 1/4 cup green olives, chopped
- 1 clove garlic, minced
- 2 tbs fresh oregano, stripped from stems
- 2 tbs fresh snipped chives
- 1/2 tsp smoked paprika
- 1 tbs good olive oil
Instructions:
Put salmon in a grill basket or on mesh grill pan.
Sprinkle with dill, then with salt
Grill for 10 – 12 minutes depending on thickness, with the cover partially closed.
Salmon will be done when it flakes easily, slightly pink in the center is fine.
Remove from heat, sliding it off the skin if needed.
Serve with
Mediterranean Salsa:
Combine all ingredients and let rest 10 minutes to meld flavors.
I had an appointment with the dermatologist this morning – nothing important, just the annual (or, in my case every three years) skin check.
Mon mari drove me.
When we first moved to Andorra I noticed that husbands seemed to drive wives around…. To do the shopping, go to the bank or post office. To be honest I found the whole idea a bit funny and a bit scary. I surely didn’t want to be the person who ended up afraid to drive and having to have my husband chauffeur me.
It didn’t take me long to figure out the truth of it all.
Parking.
Parking in Andorra was a nightmare.
Oh the big stores had huge parking lots to handle the hordes of tourist shoppers. That was never an issue. It was the small shops that the residents used, as well as the banks and post offices.
Even then one could double park, put the flashers off and run into the bank, say or to pick up the post….
Everyone did it.
But you couldn’t do it if you were going to be carrying a computer into a repair shop for example, or going to the dentist. For that you either had to park miles away and walk or do what everybody else did and go in pairs…. One person driving around while the other person ran the errand / kept the appointment.
Small towns in France have more parking than Andorra, but not much more.
Usually there’s parking somewhere near where I want to go… within a few blocks at least.
Doctors here tend to have their offices by themselves, in houses or apartment blocks. Medical complexes or clinics with multiple doctors (and parking) is not the norm, although it is changing.
My dermatologist is the worst. To get to his office I park at the train station and walk about 6 blocks. It’s not a long walk… but that assumes I can find parking at the train station, which is often full and I have to drive around waiting for someone to leave.
Anyway, mon mari kindly offered to drive me this morning.
How sweet, I thought.
Until I realized he needed to go to the garden store in town.
Oh well, it was still nice.
