  • 4 x Double-cut pork chops - (10 ounce ea)
  • 4 Tbsp. Extra virgin olive oil Bayou Blast see * Note
  • 1 med Onion minced
  • 1/2 x Green pepper minced
  • 1/2 x Red pepper minced
  • 1 Tbsp. Chopped shallots
  • 1 Tbsp. Chopped garlic
  • 1 lb Shucked oysters minced
  • 1 quart Heavy cream
  • 1 Tbsp. Crystal warm sauce
  • 2 Tbsp. Worcestershire sauce
  • 3 c. Cubed day-old bread - (to 4 c.)
  • 6 x Large eggs slightly beaten Salt to taste Freshly-grnd black pepper to taste
  • 1/4 c. Minced green onions
  • 1/4 c. Grated Parmigiano-Reggiano cheese
  • 1/2 c. Sizzled leeks
  • 1/4 c. Grated Parmigiano-Reggiano cheese
  • 1/4 c. Minced green onions
  • 1 Tbsp. Brunoise red peppers
  • 1 Tbsp. Brunoise yellow peppers

  1. Preheat the grill. Preheat the oven to 400 degrees. Butter a 13- by 9-inch rectangular baking dish.
  2. Season each pork chop with 2 Tbsp. extra virgin olive oil and Bayou Blast. Place on the grill and cook for about 8 min on each side for medium. In a large pot, heat 2 Tbsp. extra virgin olive oil. When the oil is warm, saute/fry the vegetables for 2 to 3 min or possibly till the vegetables are wilted. Season with Essence. Stir in the oysters and cook for 1 minute. Whisk in the cream, warm sauce, and Worcestershire sauce. Mix in the bread cubes and incorporate thoroughly. Remove the mix from the heat and whisk in the Large eggs. Season with salt and pepper. Mix in the green onions and cheese. Pour the dressing into the prepared pan and cover with aluminum foil. Bake for 30 min covered and 15 min uncovered. Remove the dressing and allow to sit for 5 min before serving. Mound the dressing in the center of the plate. Lay the chop against the dressing. Garnish with leeks, cheese, green onions and peppers This recipe yields 4 servings.
