,%20but%20the%20same%20cannot%20be%20said%20for%20my%20husband,%20Jim.%20He%20is%20starting%20Week%204%20of%20a%20high-protein%20(and%20almost%20nothing%20else)%20diet%20with%201%20cheat%20day%20per%20week.%20After%203%20weeks%20of%20nothing%20but%20plain,%20dry%20chicken%20breast%20and%20egg%20whites%20(I%20exaggerate,%20but%20not%20much),%20he%20decided%20to%20switch%20to%20steak%20for%20a%20while.%20I%20was%20happy%20to%20oblige%20and%20decided%20on%20Grilled%20New%20York%20Strip%20Steak%20because%20it%20has%20just%20enough%20fat%20to%20offer%20a%20pleasant%20chew%20but%20is%20lean%20enough%20that%20Jim%20won%E2%80%99t%20gain%2010%20pounds.%3C/p%3E%3Cp%3EMy%20favorite%20go-to%20steak%20seasoning%20is%20super%20simple:%20Garlic%20powder%20and%20dried%20thyme.%20Finish%20with%20kosher%20salt%20and%20freshly%20ground%20black%20pepper,%20and%20you%E2%80%99re%20good%20to%20go!%20I%20season%20the%20steaks%20first%20and%20let%20them%20sit%20out%20at%20room%20temperature%20(covered%20in%20plastic%20wrap)%20for%20at%20least%2015%20minutes%20or%20up%20to%20an%20hour%20while%20I%20prepare%20my%20sides.%20One%20of%20my%20most%20favorite%20sides%20to%20steak%20is%20Balsamic%20Mushrooms%20and%20Onions,%20so%20I%20whipped%20up%20a%20pound%20of%20those%20while%20steaming%20some%20fresh%20broccoli.%20And%20while%20I%20knew%20Jim%20was%20Just%20Saying%20No%20to%20carb-a-licious-ness,%20I%20also%20decided%20to%20make%20myself%20a%20massive%20sour-cream-and-scallion-topped%20baked%20potato.%20%20And%20you%20can%E2%80%99t%20see%20it,%20but%20there%20is%20butter%20under%20the%20sour%20cream,%20too.%3C/p%3E%3Cp%3ESince%20we%20don%E2%80%99t%20have%20a%20proper%20outdoor%20grill,%20I%20use%20a%20cast-iron%20grill%20pan%20on%20my%20gas%20stove%20top.%20I%20see%20these%20used%20all%20the%20time%20on%20the%20Food%20Network%20and%20find%20it%20pretty%20useful%20myself,%20too.%20I%20coated%20it%20with%20nonstick%20cooking%20spray%20to%20prevent%20sticking%20and%20the%20steaks%20cooked%20up%20in%20no%20time%20at%20all.%3C/p%3E%3Cp%3ENot%20a%20bad%20Sunday%20lunch!%3C/p%3E%3Cp%3ESlash%20the%20edges%20of%20each%20steak%20in%202%20or%203%20places%20to%20prevent%20curling.%20Lay%20on%20a%20flat%20surface%20such%20as%20a%20cutting%20board%20or%20baking%20sheet.%20Sprinkle%20half%20the%20garlic%20powder%20and%201%20tsp.%20thyme%20over%20the%20top%20side%20of%20each%20steak.%20Sprinkle%20generously%20with%20salt%20and%20pepper.%20Flip%20each%20steak%20over%20and%20season%20with%20remaining%20garlic%20powder%20and%20dried%20thyme.%20Season%20with%20additional%20salt%20and%20pepper.%20Let%20stand%20at%20room%20temperature%20at%20least%2015%20minutes%20or%20up%20to%201%20hour%20before%20grilling.%20Preheat%20the%20grill%20pan,%20or%20prepare%20a%20gas%20or%20charcoal%20grill,%20for%20direct%20grilling%20over%20medium%20high%20heat.%20Grill%20each%20steak%20to%20desired%20doneness,%20about%204-7%20minutes%20on%20each%20side.%20See%20the%20temperature%20guide%20below.%20Transfer%20steaks%20to%20a%20platter%20and%20tent%20loosely%20with%20aluminum%20foil.%20Let%20the%20steaks%20rest%205%20minutes%20before%20serving.%20%20%20Notes%20Beef%20Doneness%20Guide%3C/p%3E%3Cp%3EDoneness:%20Cook%20Until%20Thermometer%20Registers:%3C/p%3E%3Cp%3ERare%20115%C2%B0%20-%20120%C2%B0%3C/p%3E%3Cp%3EMedium-Rare%20120%C2%B0%20-%20125%C2%B0%3C/p%3E%3Cp%3EMedium%20130%C2%B0%20-%20135%C2%B0%3C/p%3E%3Cp%3EWell-Done%20150%C2%B0%20-%20155%C2%B0%3C/p%3E%3Cp%3E3.2.2807%3C/p%3E){kind=link}
