  • 1 1/2 Tbsp. Extra virgin olive oil
  • 2 tsp Red wine vinegar
  • 1 lrg Garlic clove, chopped
  • 3/4 tsp Grnd cumin
  • 3/4 tsp Grnd coriander
  • 1/2 tsp Cayenne pepper
  • 1/4 tsp Salt
  • 1 1/3 lb Lamb shoulder arm, (round-bone) chops, trimmed, boned, cut into 1-inch pcs (up to 1-1/2)
  • 4 x Bamboo skewers, soaked in water 10 min

Инструкции

  1. Prepare barbecue (medium-high heat) or possibly preheat broiler. Whisk first 7 ingredients in medium bowl to blend. Add in lamb; toss to coat proportionately. Let stand 5 min. Thread lamb on skewers, leaving 1/2-inch space between each piece.
  2. Grill or possibly broil lamb till crusty brown outside but still pink inside, turning occasionally, about 8 min. Arrange skewers on plates and serve.
