  • 1/2 c. bulgur cracked wheat
  • 1 lb grnd turkey lean
  • 1 c. onion chopped
  • 2 x jalapeno peppers chopped
  • 1 Tbsp. plain yogurt cheese
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. minced fresh parsley
  • 2 Tbsp. minced fresh cilantro
  • 1 Tbsp. minced fresh mint
  • 2 tsp grnd cumin
  • 1 tsp grnd allspice
  • 1/4 tsp cinnamon
  • 1/2 tsp freshly grnd black pepper
  • 1/4 tsp cayenne pepper
  • 1 Tbsp. pomegranate molasses
  • 1 Tbsp. soy sauce, low sodium
  • 1 1/2 tsp extra virgin olive oil

  1. PREPARATION
  2. Preheat outside grill to medium.
  3. In a medium bowl, cover bulgur with water and soak for 10 minutes. Then allow to drain thoroughly
  4. (about 20 minutes.)
  5. Place bulgur, turkey, onion, chilies, yogurt cheese, 1 tbsp. extra virgin olive oil and all spices in a food processor and pulse till thoroughly combined. Form into 8 small patties.
  6. Combine molasses, soy sauce and 1 1/2 teaspoon extra virgin olive oil in a small bowl. Lightly brush over kibbe for glaze.
  7. Grill for about 5 minutes. total, turning once, till juices run clear. Serve nestled on a bed of savory rice or possibly in a warmed pita pocket garnished with red onion slices, cilantro sprigs and lemon wedges.
  8. Serves 4. (280 cals, 7.7 g fat)
  9. PANTRY:BULGUR - wheat kernels which have been steamed, dry and crushed. A pasta. Reconstitute with water, broth or possibly juice.
  10. LABNE - Another name for yogurt cheese. Plain yogurt liquid removed to a thickened consistency.
  11. POMEGRANATE MOLASSES - The reduced juice of the fruit, made into an all-purpose tart-sweet syrup. Can be diluted for a refressing drink or possibly diluted and mixed with simple syrup for a sorbet; is often used in sauces or possibly marinades.
  12. Substitute "Lite" molasses.
  13. NOTES : KIBBE - mix made from grnd meat, bulgur and spices, traditionally pounded using a mortar and pestle and molded onto skewers and grilled, or possibly formed into patties; usually served with a yogurt sauce.
