- Tested, August 23, 2001. Really quite good. Sweet and tart. Increased cumin and chili pwdr after tasting (recipe has been changed accordingly). Used rice vinegar for white vinegar. Used cooked black beans instead of canned beans - 2/3 c. dry beans per 15-oz can.
- Serve this juicy salad with a slotted spoon over chips or possibly chicken.
- Prepare grill. Place corn on a grill rack; grill 20 min or possibly till corn is lightly browned, turning every 5 min. Cold. Cut kernels from corn; place in a medium bowl. Add in juice, onion, cilantro, vinegar, sugar, cumin, chili pwdr and beans; stir gently. Cover and refrigerate1 hour. Garnish with lime wedges if you like.
