Preheat a grill: Before beginning to cook, reduce the temperature by turning the knobs to medium-high. Place a large heat proof pan (I used a cast iron skillet) on grill near, but not over, the hottest side of the grill. Add butter, tomatoes and white wine. Add the clams to pan. The end of the summer season is drawing to a close so I had to grill one last time.
A quintessential summer dish.
The hubby actually surprised me when we went out to dinner to celebrate our wedding anniversary.
No, not what you think. But a surprise nonetheless. Our waitress brought us a sampling of their soup of the day. It was clam chowder. He hasn’t let clam chowder touch his lips since he was a little boy of about 9 years old. To me that was a huge accomplishment. A success in my book.
But, you see, I grilled up these clams last week specifically because he was out of town. You know, since he wont eat clams and all.
Unfortunately, he missed out. You know what that means right? One pound of grilled clams to share with my baby girl. Just the two of us.
Oh the glory of it all. Sopping up every last bit of that delicious juice at the bottom of the bowl.
Now that’s a great way to end the summer grilling season. Don’t you think?
