- Cut 4 pcs of foil about 30cm square.
- Skin the chicken pcs and cut 3 slits in each chicken breast.
- Lay on the foil.
- Mix together the oil lemon juice and thyme salt and pepper.
- Draw the foil round the chicken pour on the sauce and seal the parcels.
- Cook the chicken parcels under a preheated moderate grill turning them once for 35 min till the juices run clear when the chicken pcs are pierced with a skewer.
- It is important to check which if using an electric grill the foil does not touch the element.
- Increase the heat to high.
- Open the parcels arrange the sliced ham then cheese then tomatoes on the chicken breasts and spoon a little sauce on to the tomatoes.
- Grill the topping under high heat for about 34 min till the cheese is bubbling.
- For a really super accompaniment try corn on the cob cooked in boiling water and then generously brushed with melted butter and pepper.
- A couple of min under the warm grill sizzles them to perfection.
